Most plots face west and grow on sandy, granitic soils. The grapes are hand harvested, carefully sorted, and gently whole bunch pressed using a pneumatic press. Fermentation happens with native yeasts in stainless steel tanks, followed by about 6 months resting on the lees in various vessels, with weekly btonnage
